I saw this on Anne's show this weekend and just HAD to make it. It turned out so great. I used a little more red wine vinegar and a couple more orange zest strips than is written in the recipe. I could not find the Jerusalem artichokes either, so I only had the squash. Honestly, the squash was good in the dish, but I am not sure it is worth the trouble. The meat was so flavorful, I will definitely be making this again. Thanks Anne!

After makig this great-tasting dish, I sent a link to the recipe to my sister who lives 6 hours aways from me. It turns out, she watched the Oct 16th show and made the Pot Roast dish this weekend, too! She and her husband loved it as well.

For those that couldn't find chokes - don't worry, they honestly didn't add much ... But the rest of the dish is incredible. Don't be afraid of the red wine vinegar, it might seem like a lot, or overpowering, but mellows out and adds to areal depth of flavor.

My family loved this new, unique dish! Couldn't find the artichokes either - so used a rutebaga instead. Had a firmer consistency than the squash, but made a decent substitution. Loved the uniqueness of the mild sweet flavor. The mashed potatoes/parsnips were a huge hit as well!

This was good but the red wine vinegar gave it a distinct flavor. I am not sure I liked the sour type flavor that well and it took a long time to cook.

Thought I made good pot roast; then I made this. Wow, Anne, you knocked it out of the park this time! No 'chokes in town, so I added a bit more squash and used prunes...delicious! Thanks, Anne, you do great work.

Loved, loved, loved it! The orange and star anise are a great complement to the squash. No 'chokes here, either, so cannot comment about that. Will definitely make again. Thank you, Chef Anne!

Awesome!! I also could not find Jerusalem artichokes so I left all artichokes out. The parsnips in the potatoes were such a wonderful surprise. I did not tell my husband they were in, just said a secret ingredient. I have never cooked with parsnips but will continue. I always feel that mashed potatoes need something else. I do not have a food mill (on my list to buy and just used my mixer. Definite keeper!!!

This is NOT your mama's pot roast. Having said that, it IS delicious and unexpected. I could not find Jerusalem artichokes (which is why I only gave it 4 stars so I used regular artichokes from a can that were NOT marinated because there is already vinegar in the dish. The figs were hard to find and a bit pricey so I just left them out of the dish. I did need to add more stock to the pot after cooking for a bit. Otherwise, I followed the recipe as written.
