Before you go tracking down the sunchokes, be aware that they contain some carbs that humans cannot digest and will make you VERY gassy. The dish itself is delicious, but tracking down sunchokes and then having severe stomach pain later did not make it worth it. While eating a sunchoke, one of my friends said it reminded him of a parsnip, so the next time I do this combo of roasted veggies, I'll just do the parsnips. They're easier to find and don't cause severe flatulence.

This is the second time I made this for Christmas & every time it's a hit! Definitely track down the sunchokes...it's not just fun to cook something almost nobody has eaten, they are alo delicious when roasted (a little bitter raw!! I also addede a full head of garlic cloves to the pan & roasted a leg of lamb on top of it.

I have never roasted cauliflower before, I must say I will be making this weekly. I didn't have the sunchokes but will add them next time for sure.

I couldn't find the sunchokes anywhere so I substituted parsnips. I just thought this was ok. There was nothing special about it though.

I loved the roasted veggies. I have not made the lamb yet. Probably will on Easter. I wonder too why she growls so much. I don't like the way she puts everything up to her nose to smell it, especially when you see it touches her nose sometimes. I love her recipes though. She's certainly not Ina.

This was my first recipe with "sunchokes" and will probably be my last. I was not a fan. And I am a vegetable LOVER!! However, in my opinion, they tasted like an under cooked potato. Maybe I will try this recipe again and substitue potatoes instead of sunchokes.

I found the 'sunchokes' at my Whole Foods and I would have never tried these funky looking vegetables had I not remembered seeing this recipe. Now that I have, I can't get enough of them or their accompanying brussel sprouts and cauliflower. So happy to add this my side dish list.
