    Hey Brooke,
I've used a roll of breakfast sausage for over 30 yrs (favorite: Jimmy Dean Sage, or the regular style if using fresh sage, so you will be fine. I find Italian sausage and garlic not "thanksgiving", but the rest of this recipe sounds fine. Good Luck!

    Sounds delicious!
I was advised to used regular breakfast sausage..... what are your thoughts?
    I bought it already.
    Will it be to 'dull'?
If so what spices should add?
    Thanks
    Brooke

Have made this now for 2 years in a row, to broad acclaim. If spice is an issue, I do agree with other folks that using a less spicy sausage is a good idea. This is a tasty, different, and easy alternative to the traditional stuffing in our family - and still pleases everyone. Seconds all around!

This was a good recipe to use as a springboard for something more to our preferences. My parents don't like spicy foods, so I used Jimmy Dean Maple sausage. I substituted pecans for the walnuts and two peeled, chopped apples for the dried cranberries. Our local groceries don't carry fresh herbs this time of the year, so I used smaller amounts of dried and it was fine. The family pronounced this the best dressing I've ever made.

Made this for Christmas dinner...Ridiculously GOOD!!!!! It was a hit, everyone ate seconds and thirds. If you don't like the smell or taste of rosemary you won't like it because the rosemary really gives it flavor with the sausage and it smells deliciously savory. Just don't leave it in the oven too long like me! It was still great!

This was good....not amazing, in my opinion. I did like the fresh herbs and cranberries. But it didn't "wow" my guests.
