    My Italian Grandmother use to make this and I forgot about it until Ann brought it back in my mind. Ann made it look so easy, it is easier than you think. It is one of the most favorful, and you can show off to your family and friends and cook in front of them. Follow her direction and you will make a great dinner! Thank you Ann, Love you!

    The Best Thing Anne Burrell ever made, and me too! I made it last night, hands down the best thing I ever made. The only think I did differently was I took a tip from some of the other reviews and I tempered the egg mixture a bit with pasta water. The sauce was creamy and delicious, no scrambled eggs. I'll be making this one again!

    Wonderful sauce without the heaviness of others, very rich. We served with Swiss Chard (garlic EVOO s&p red wine vinegar to give an acid balance to all that richness. Important to remove pancetta from heat to cool. I did the 3/4 cup of each cheese like several other posters. I took about 1/3 to 1/2 cup of pasta water and tempered the eggs a bit. They did not scramble on me. The sauce was a little runny for me at first so I did return the entire pan to very low heat for a few minutes stirring constantly. Wonderful recipe.

    I made this for dinner and it was my third attempt at making a carbonara recipe. FINALLY I didn't end up with scrambeled eggs. The other recipes I have tried instruct to temper the eggs with the pasta water and there is absolutely no need to do that as long as you stir it into the pasta quickly! Anne you hit this spot on!!

    Quick and kinda easy if you follow the directions. Tasted pretty good. Still had some egg scramble on the bottom, but didn't stick to the pasta. Big hit in my house!

    Excellent! Very simple and quick as long as you follow the directions. Be sure to continually whisk the eggs so they don't scramble. The scallions are a great addition. We also added cherry tomatoes which is a good variation.

    I made this for dinner tonight, after seeing it on The Best Thing I Ever Ate. Like another poster, I forgot the pasta water. But it was still a hit with the family.

    This was SUCH a great recipe. I have tried to make carbonara before and the recipes called for like 1-2 eggs and the pasta just ended up so dry. I was so excited when I saw Chef Anne make and it she used a crazy amount of eggs. My eggs ended up scrambling a bit i think because i forgot the pasta water, but it was still AMAZING! I added chicked and asparagus, but it would've been just as good just as Chef Anne did it! My husband was psyched because he really believes because of the eggs, he can have it for breakfast! : Thanks, Chef Anne!
