    Super easy...very rich and creamy! My husband loved it. I didn't have pancetta so I did have to sub out for bacon, like Ann mentioned on best thing I ever made. I also cut the recipe in half, still came out amazing.

    The recipe was great. Someone had mentioned either in this post or another that using a cast iron pan was a must. I should have known better as the cast iron holds the heat so even though I tempered the eggs and turned off the heat I got a tiny bit of scramble at the beginning of adding the egg mixture. But by the end it was all good. I halved the recipe except for the cheese & pancetta. Also added parsley with the green onion at end. Oh end chili flakes. It was good.

    I thought this recipe was great! I enjoyed watching Ann make it (but she always makes everything simple and accessible -very appreciated!( took less than 20 minutes from start to finish Loved the tip on generously salting the water (I've only ever added a little salt but never known why-I could truly taste the difference in the pasta I used bacon as I was a bit rushed and couldn't wait for the pancetta to defrost.

    A good quick and easy meal-I will never use or buy canned cream sauces for my pasta again! Thank you :

    This was really good. Not hard to make, but you want to follow her directions closley so it will all come together well.

    I did add a handful of frozen peas and some diced cooked chicken breast and served it with Olive Garden style bread sticks.

    I think next time I'll try tempering the eggs with a couple ladels of water to make the sauce thinner so it stays saucier.

    This was tasty, quick and easy. I followed the recipe other than:
    ~adding some veggies (diced green and red peppers and zucchini added the last couple of minutes of cooking the pancetta and some spinach I tore up and added at the end of everything else.
    ~I added a couple ladles of the pasta water to temper the eggs (of which I used 6 and it was plenty creamy before adding it to the pasta mixture.
    ~I also added some cayenne pepper to the egg mixture for some extra flavor and because it's an excellent antioxidant.

    I Saw Anne make this on tv yesterday and it looked so good I made it today. First of all it is soo easy to make. I used bacon and both cheeses stated in the recipe and the green onions at the end as directed. I must say I was a bit reluctant about the very slightly cooked egg.. The dish was excellent. Creamy and just a little bite from the cracked pepper and the sharp taste of the cheese makes it so flavorful. Make this one you won't be disappointed. Add some nice crusty bread.

    Not impressed at all. I even went back and double checked the recipe because I was sure I did something wrong. It was very bland and very stodgy.
