I never considered combining bacon with into my sweet potato and apple dish. Oh my lord but bacon does make everything better. Made this with grilled maple and cider brined pork chops. Died and gone to piggy heaven.

This is very good. I also added 1 large russet potato diced. This makes alot. I had it as a side dish for dinner and it served 8 people. I will make this again.

We LOVED this dish. I made it as written, but added a slight dusting of cayenne and cinnamon while cooking.
We finished it this morning over cheese grits. Yummmmmmmmmmmmmm!

I love this recipe and have made it several times. I leave out the peptias and the scallions. I do think that pomegranate seeds would be a great addition. The last time I took the leftovers and combined with my leftover black eyed peas from NY Day and made a great soup. The sweetness of the potatoes was an unexpected surprise.

This is really tasty, the perfect brunch side, or breakfast. I used turkey bacon and skipped the pepitas. Followed cooking directions precisely and the sweet potatoes really browned up nicely. Seasoning is crucial with this dish. It really needs more salt than you think, although that may be due to my using turkey bacon. Needs plenty of black pepper, and I added a pinch of cayenne, which really seemed to go a long way.

Fan-TAS-tic!!! Only "criticism"? Probably not "Easy" but "Medium". Made this twice; as usual, 2nd time was better. Carefully read all reviews and thank you, they were a big help. One reviewer said use "good culinary techniques". Amen. Other good advice? Definitely drain almost all bacon fat. Dry crisp bacon on side & return at end. Could be "zippier" too. After sauteing onions, I added the splash of apple cider. Also added a little cayenne pepper & brown sugar...be careful with these. After al dente potato roast, then browned them in separate frying pan & added back at end. 1st time was too soggy. Hard to find the green pumpkin seeds but they were so worth it, for both color & foodie braggin' rights!

I love sweet potatoes all day any day but this recipe is NOT a keeper. Bacon with sweet potatoes and apples sounds like it would be a good combination but as executed the completed dish did not live up to my expectations. The onion and the pumpkin seeds were not to my liking. I tried this receipe looking for an alternative to the usual sweet potatoes we serve at Thanksgiving but will have to continue my search. I love Anne and her shows but will not be making this dish again.
