    I like to remove the bacon once the fat has been completely rendered and reserve it until the end. This keeps the bacon from getting soggy and provides great texture to the dish when served.

    This dish is so different, unique AND delicious! I made it with the Maple Chicken and the 2 dishes were great together!!!! I would definitely make this again, and again and again! Way to go Anne! You ARE a rock star!!! Thank you!!

    I also made this with butternut squash as that's what I could get at the Farmer's Market--worked well. I agree with a previous poster who said it could use a bit of brightness at the end, and so I added a splash of cider vinegar--great suggestion.

    Served this with an organic ham, homemade bread, and a salad. How could this be bad?

    I prepared this dish to accompany my broiled pork chops. OH MY GOODNESS! It was absolutely delicious. My Mom (who doesn't like anything loved it as well. I can't wait to prepare for the rest of my family this Thanksgiving weekend!

    I fixed this last night, with pan-seared scallops, and the hash was definitely the star! I used pancetta instead of bacon, and toasted walnuts in place of the pepitas, which I didn't have. Left out the green onions, which probably would have added some freshness, but frankly, I don't think it needed them. I'll definitely make this again!

    I'm not a big sweet potato fan, but I knew this was going to be good. My wife doesn't like maple, so I took a chance & served it with a savory chicken entree. Like others have said, this will work with just about anything!!!!

    I paired this with Bobby Flay's Maple Horseradish Pork Chops and it was excellent. A friend suggested adding a little acid (apple cider vinegar which I think really pulled everything together. Really easy and unbelievably tasty!

    A great side dish! Roasting the sweet potatoes bring out their taste. We liked it so much with your chicken dish I had to make it again for the left-overs because everyone kept getting more. This is a keeper and guaranteed winner for everyone! I love you man! Keep these recipes coming. <my first posting>

    it was Aweful!!!!!!!!!!!!
    It had no flavor which was very disappointing.
    My family and I had to go out and eat after making this and the Maple Glazed
    Chicken.
    I would not recommend it at all :0(((((
