    This is absolutely the BEST homemade from scratch cake that I've ever made! Was a little hard to find sweetened cream of coconut, but I found it at Whole Foods. The only slight modification I made to the recipe was to use vanilla sugar, and replaced half of the vanilla extract with coconut extract just for a little extra punch of coconut flavor. Even the raw batter was DELICIOUS (I know!!! The cakes baked perfectly round and smooth, no "domes" for once! They did bake a little faster in my oven so if your oven runs hot, you should check them at about 35 min. FABULOUS cake recipe!

    DEATH BY COCONUT CREAM !!!
    This is a super fantastic cake recipe!
    While the cake is not overly sweet, IT IS EXTREMELY RICH.
    The frosting is soft, but not unmanagable. It is definitely delicious.
    Other than using CocoReal brand instead of CocoLopez coconut cream, and making three layers instead of two (did not have 2" deep cake pans we followed the recipe to the T.... and we were not disappointed. In our initial excitement over the results, we shared this cake with friends and neighbors..... won't make that mistake again : The next one will be kept in the cake vault :
    We kept the cake refrigerated, but found that even when individual slices were brought back to room temperature before serving, the taste and texture were somewhat altered. The butter content seemed to be suspended. We found that a brief warming in the microwave of 20-25 seconds per slice restored it to just baked taste and texture.
    This would be a special occasion cake, a real crowd pleaser.

    I wanted to love this cake but it fell short of great. I read the reviews that mentioned the frosting being too thin so I added extra powdered sugar and I chilled it. That still wasn't enough. I found it messy and the only thing that made it look nice was the coconut over the frosting which hid the flaws. I expected the cake to be more moist as well. Overall it was alright but after all the effort I had put in, I was disappointed and I'll try a different recipe next time.

    I'm not a big coconut fan but this was DE-licious! I couldn't find coconut cream at the store, only unsweetened cononut milk. The cream from the milk settles at the top half of each can if it is not shaken. I bought 3 cans and scraped the half-can of cream for 2 of the cans and bumped the sugar up to 2 cups. Turned out great and not too sweet. (i did the same thing with the last coconut milk can for the icing and the icing definitely needs a lot more powder sugar to stuffen up

    I made this for Easter, and my incredibly picky 84 year old grandmother proclaimed that it was the best cake she had ever had!! This cake is HUGE! Folding in the egg whites must be the cause-make sure your cake pans are on the deep side. Really a delicious cake. Don't skip toasting the coconut. It is worth it!! I registered on this website just so I could give it 5 stars!

    This cake was very good. The icing was great. It was a little heavier than I expected; maybe because I used a different cream of coconut; however everyone loved it. I will make it again using the recommended cream of coconut.

    Awesome! According to my husband, coconut being his favorite cake, this was very tasty and not too sweet. Thanks Anne. This is my FIRST time baking a cake that didn't come out of a box, LOL! Recipe extremely easy to follow... 5 stars in my book...Thanks again
