I don't particularly like to bake, so I only do so for very special reasons. To make a long story short, I entered this cake in the dessert contest for my company's annual picnic, and won 1st prize! It is moist, dense, not too sweet, and has a fabulous coconut flavor. I made a special trip to Chinatown to obtain freshly ground coconut which I intended to sprinkle on the frosting. The man grating it was a little too aggressive and grated some of the inside skin into the white meat, so I ended up not using it. It was a blessing in disguise because several people commented about how much they enjoyed the coconut flavor of the frosting without the shredded coconut. The frosting is definitely on the runny side, but firmed up well when refrigerated. Next time, I'll probably cut back a little on the cream cheese or coconut cream, or add more powdered sugar to stiffen it a little.

Yummmmmmmmyyyy!! If you are looking for a classic coconut cream cake that's moist, flavorful, not-sickly-sweet, easy to make, this is the recipe to use.

This was the Best cake ever!!!I don't even like coconut that much, but my husband does. So I made the cake for him for fathers day. He loved it, the whole family loved it. My husband is the only one of us who would say they love coconut in our family, but we were all won over by the moist, fluffy, tasty cake. I can't wait to make it again, and again, and again....

HOLY COW was this cake good. I made it for my boss's 60 birthday party. Not a crumb was left. It got rave reviews from all of my coworkers. I put the fresh lime juice and lime zest in the frosting which rounded out the flavor perfectly. I softened the can of coconut cream by letting the can sit in a pitcher of warm water for about 10 minuntes. The cake was super moist and dense. This is definitely a keeper!!!

This cake is insane!!!!!!!!!!!!! It's so good. I agree that the frosting was a little runny, but I just leaved in the refrig. for 30 mnts and it was perfect.
