made this after i saw the show. used "coco real" cream of coconut in a squeeze bottle...shook it well before use. couldn't find "coco loco". once iced and toasted coconut applied, i refrigerated it and then wrapped it in plastic wrap and froze it. once thawed, it was absolutely delicious. i did not do the step of the egg whites... simply added the eggs. perfect cake consisitency!

This looked so good yesterday that I had to try it. I had everything except the cream of coconut, I went to the store to get it. Oh my this cake is oh so good it was moist, the right amount of sweetness with that coconut taste . It was better than the square shaped coconut cakes that I miss in the store.

Fabulous! I took this recipe and made cupcakes...just shortened the cooking time...topped with frosting and toasted coconut. The cake itself is moist and delicious on it's own. This will go in my recipe file for sure. Never worked with coconut cream before,mine had a thick layer of solid on top that was hard to mix in. Any suggestions?

TO DIE FOR. I made in a bundt pan and cooked at 325 degrees for about 55 minutes. I also cut the icing recipe in half and had plenty left over. This cake is not difficult to make at all. If you love coconut DO IT. I had a hard time finding coconut cream at Publix but it was near the alcohol drink mixes I guess for Pina Coladas. Coconut cream is NOT the same thing as coconut milk. The cake comes out super moist. Next time I make this I am going to just make the cake. That would be good on it's own.

Excellent combination of the right ingredients for flavor and uniqueness. I like how well both recipes, joined, made this an outstanding recipe, itself. I look forward to featuring this on Skirt in the Kitchen. Simply the best coconut cake, ever-- and I did put a splash of real lime juice and lemon in the frosting-- I'm glad I did, it was so worth it. Awesome frosting, creamy in texture, too.

Hi ann, This was a great cake.I had a can of coconut milk and was not sure what to do with it. I am going to make it for my senior citizens next dinner I do for them once a month. I made it for my husband today, he loved it.I love doing new dessert. Your r my goto dessert person to.
