Gooey Chocolate Pudding Cake

Directions

Preheat the oven to 350 degrees F.

For the cake: Whisk together the sugar, flour, cocoa, baking powder and salt in a bowl. Whisk in the milk, butter and vanilla. Stir together until smooth with a wooden spoon or spatula.

Pour the batter into an ungreased 9-inch square baking pan. Use an offset spatula to level into pan.

For the topping: Whisk together the sugars and cocoa and sprinkle it evenly over the batter. Pour the hot water over the top, resist the temptation to stir it into the batter.

Bake about 30 minutes, you want the center to bubble and look almost set, almost like an undercooked brownie. Take out of the oven and let stand 15 minutes. Serve in dessert dishes, spooning sauce from bottom of pan over top. Serve with mint chocolate chip ice cream, if desired.

I kind of agree that it's a little bland. It's just missing something. When I looked at it my brain said, "Ooooo it looks like hot fudge cake." But when I ate some it was nothing like that. I can taste the cocoa powder, like I just took a spoon of it. Perhaps there's just a little something it needs. Or maybe it's just because my brain is telling me fudge and it's not. I did use a 9x13 pan (not sure if that's what it meant in the directions) and the consistency was great, although I didn't leave it in the whole 30 minutes. Don't know where I went wrong. Followed the directions exactly and, I've made pudding cakes before. This did not turn out at all. After 40min I had liquid on top and a chewy glob of very dense chocolate "dumpling" under rather than cake. The taste was ok, very sweet but, that was not a bad thing necessarily. This recipe was wicked easy and it came out great! I was a little skeptical when the topping was just sitting on top but once it bakes, it sinks right to the middle and when you heat it to serve it comes out like molten lave cake! This is the easiest cake I have ever made not from a box. It's good when it's warm with the mint ice cream (a great touch, but it's really good cold as well. Has anyone try this with ramekins? I did with large ones trying to get more individual portions... unfortunately it did NOT turn out well. Gooey, chocolately and warm from the oven......a perfect comfort dessert! I've made it twice so far. The first time I think I undercooked it a tad and so it was more pudding than cake. It was so delicious! I actually "veganized" it by using soymilk instead of regular milk, and nucoa butter instead of real butter. It was lightly crispy on top, perfectly moist and squishy in the middle and a wonderful chocolatey gooey mess underneath everything. Just made this cake for mother's day dessert. I was a little worried after reading some of the reviews, but it came out awesome. Huge hit with every person at our bbq (and that's not something that happens often!). The only change I made was to add a handful or so of mini chocolate chips to the topping - we really like chocolate in my family. I served the cake with cookies n cream ice cream, and drizzled the fudge sauce from the bottom of the pan over the top of the ice cream. We really liked this cake! Because of some of the comments about this cake being too bland or too sweet, I used extra dark cocoa, added a teaspoon of espresso powder and a bit more salt to the cake (1/2 teaspoon total),and a pinch of salt to the pudding part. I baked it for 30 minutes, and it came out great! This was my first attempt at a recipe by Anne. I thought this was fabulous - sort of like an inside-out molten cake (for which I don't have the appropriate ramikens anyway. I made this for a friend's birthday. It reminded of a cruise ship dessert. It was wonderful, and SO EASY. We had most or all of the ingredients. Ewwy Gooey Mess! After watching the episode, I was excited to try this recipe, especially since I have all the ingredients in the cupboard all year-round. I made it exactly as described and it ended up being a mess. Pouring so much hot water on the top seemed like a very strange thing to do and after 50 mins. of cooking I still had water swimming on the top. No crust at all. I poured some water out and stuck it back in the oven for another 10 mins. Still no crust. I still tried it though, hoping it would be okay underneath but it tasted bad and I had to throw the whole thing away. Not very chocolatey at all. Yuck. Holy moly! This dessert is awesome and turned out perfect!! For the people who gave it negative reviews because it didn't turn out right for them, that was NOT the recipe's fault. If the instructions are followed exactly right, it will turn out the way it's suppose to...pudding like and GOOEY on the bottom with a brownie like crust on top. I made a mocha version of it by adding a TBSP of instant espresso in with the flour mix and replaced the water with coffee. I saw the show and immediately thought it looked delicious and very easy to make. I love chocolate, but it was too sweet and "wet". I would use half the sugar for the topping, , and instead of 1 and 1/4 cup water, I would reduce it to 3/4 cup and cook it for 40 minutes (instead of 30. I followed the recipee as it appeared on the website and mine did not turn up so great. Quite disappointed as I had high hopes. I thought it would be like a molten cake. In fact, I used really good gourmet dark cocoa... too bad, good ingredient gone to waste. I will give it another shot but make the above mention adjustments. Really not a good recipe. It is almost two times too sweet, and the texture is strange and spongey- something like a cake batter that went wrong and was missing leavening agents or something. It sounded like it would be rich and luscious and like the best of a molten cake and brownie mixed together- but it was just strange and not good. This chocolate pudding cake lived up to Anne's description - it was gooey and intensely chocolate and altogether divine! This was one of the easiest desserts I have ever made and it took less than 10 minutes to assemble and get into the oven. I used Hersey's Special Dark cocoa for this recipe which is intensely chocolate and the flavor was deep, dark and delicious! This is a fool proof recipe that enough a novice baker can throw together in minutes and the results are spectacular!!!! I don't understand the negative reviews on this - it is supposed to be gooey, the 1 1/4 cups water measurment is correct, and it cooks in 30 minutes. I made this recipe exactly as described. It was the first desert I ever tried of Anne's. I love Anne, and was hoping that it would be incredible as she is, but I found the desert lacked flavor, i.e. it tasted a bit on the bland side...not chocolaty enough.
