Gooey Chocolate Pudding Cake

Preheat the oven to 350 degrees F.

For the cake: Whisk together the sugar, flour, cocoa, baking powder and salt in a bowl. Whisk in the milk, butter and vanilla. Stir together until smooth with a wooden spoon or spatula.

Pour the batter into an ungreased 9-inch square baking pan. Use an offset spatula to level into pan.

For the topping: Whisk together the sugars and cocoa and sprinkle it evenly over the batter. Pour the hot water over the top, resist the temptation to stir it into the batter.

Bake about 30 minutes, you want the center to bubble and look almost set, almost like an undercooked brownie. Take out of the oven and let stand 15 minutes. Serve in dessert dishes, spooning sauce from bottom of pan over top. Serve with mint chocolate chip ice cream, if desired.

I kind of agree that it's a little bland. It's just missing something. When I looked at it my brain said, "Ooooo it looks like hot fudge cake." But when I ate some it was nothing like that. I can taste the cocoa powder, like I just took a spoon of it. Perhaps there's just a little something it needs. Or maybe it's just because my brain is telling me fudge and it's not. I did use a 9x13 pan (not sure if that's what it meant in the directions) and the consistency was great, although I didn't leave it in the whole 30 minutes. Don't know where I went wrong. Followed the directions exactly and, I've made pudding cakes before. This did not turn out at all. After 40min I had liquid on top and a chewy glob of very dense chocolate "dumpling" under rather than cake. The taste was ok, very sweet but, that was not a bad thing necessarily. This recipe was wicked easy and it came out great! I was a little skeptical when the topping was just sitting on top but once it bakes, it sinks right to the middle and when you heat it to serve it comes out like molten lave cake!
