    My family loved this pasta dish. It made so much I called some friends for take out. They loved it to. We still had leftovers so I served it again three days later for dinner, it was just as good as the day I made it. Thank you for sharing, this is a recipe I will definitely make again.

    This was delicious and really easy to make! I used canned plum tomatoes instead to save time, and added a pinch of pesto sauce for extra flavor. I made the dish for my fiancé and his friend who were both really skeptical about the eggplant and they both loved it. Will definitely be making it again!

    MY FAMILY LOVED THIS .WE LOVE EGGPLANT AND THIS WAS A DIFFERANT WAY OF PREPARING IT. I DIDN'T HAVE FRESH TOMATOES(IT WAS WINTER SO I USED CANNED DICED TOMATOES AND MASHED THEM A LITTLE. DIDN'T HAVE FRESH BASIL BUT HAD A PACKAGE OF BABY SPINACH SO USED THAT. THEY BOTH WORKED GREAT AND THIS IS NOW A STAPLE IN OUR HOUSE. LANE MCKAY

    I made this dish tonight, it came out great healthy and tasty. Easy to understand the cooking directions. Only thing I did different was used canned stewed tomatoes, the Italian style stewed tomatoes by Del Monte (hand smashing it to more softer texture . Over all a great dish to make for friends and family.

    I love this recipe. I prefer japanese eggplant and make a recipe similar to this using them. Delicious, quick, healthy! What's not to love?

    Made this for me and my husband, who isn't keen on eggplant. Since then he has requested this dish every week! I always make about half a recipe and add extra garlic (minced. Good with or without the mozzarella - but the parmesan is a must.
