I decided to go with the 13x9x2 pan and it worked fabulously. An extra 15-20 minutes is all it took. And the center was not soggy at all. I also decided to make this ahead of time. I made the sauce and put it in a pyrex measuring cup and let it hang out in the fridge. Before serving the sauce I warmed it back up in the microwave for 1min 45 secs. The consistency was perfect. I also put the bread pudding in the fridge for like 5 hours. And 40 or so minutes before serving I let the bread pudding warm up in a 200 degree oven. It was just like if I would have served it fresh from the oven. I highly recommend sticking to the recipe. Although I used salted butter and just omitted the additional salt except for a tiny pinch in the bread pudding recipe. I also used salted butter for the apple brandy sauce. It really was awesome. Each component needed the other. All the way to the whipped cream.

This was excellent. I keep a bottle of Calvados (which I use in my Coq au Vin and I was very pleased with the results. I'm not much of a dessert fan but this was awesome!!

Yikes!! Hate people who give a review without making it... but I wanted to say that applejack if a cheap sub for the apple brandy. It's alcoholic just in case someone MIGHT not know. I use it frequently to save money.

I would love to make this recipe and would also like to know what can be substituted for the Apple Brandy.

I am pretty experienced with cooking & baking but this one didn't finish in the time the recipe said. I ended up taking them out too early (and I even used a regular sized muffin tin. I couldn't find apple brandy at my grocery store so I just substituted regular brandy and it was FABULOUS! Wasn't crazy about the sauce but the pudding was divine. I did not make the cream so not rating that, though it appears they left out the steps to making it... baaaad foodnetwork.com peeps! = Thank you for a delicious way to prepare bread pudding... yum!
