Ingredients
  • 1/4 cup apple cider
  • 1 tablespoon brown sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup julienned apples (preferably Granny Smith)
  • 1 cup julienned pear
  • 1/4 cup dried cranberries
  • 2 cups julienned Belgium endive
Directions
  • In a small bowl, mix together the apple cider, brown sugar, salt, and pepper.

  • Toss the apples, pears, and dried cranberries in the apple cider mixture until well combined.

  • Evenly divide the endive among 4 plates. Divide the apple mixture into 4 equal portions and top each plate of endive.
