Ingredients
- 4 cups flour
- 1 tablespoon baking soda
- 1/4 teaspoon baking powder
- 1 1/2 teaspoon salt
- 1 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 5 eggs
- 2 cups sugar
- 1 cup brown sugar
- 1 1/2 cup oil
- 1 tablespoon vanilla
- 2 cups shredded zucchini bread
- 1 cup shredded apples
- 1 1/2 cup chopped nuts
Directions
Preheat oven to 350 degrees F.
Combine first 6 ingredients and set aside.
Combine eggs, oil, sugars, and vanilla in a large bowl. Beat until well blended. Stir in zucchini, apples, and nuts. Add to dry ingredients; stir until moistened.
Put into greased and floured loaf pans. Bake at 350 degrees for 50 to 55 minutes.

I used 1 1/2c reg flour 1 3/4 whole wheat 1 1/2 Q oats 1c reg sugar and 1/2c honey , 1c oil 3 granny smith apples and 3 med zucchini in the food prossesor . increased the time to at least 60 min . I had extra batter leftover I made muffens to hmmm hmmm good forget-about-it!!

I made the bread for my family and for church. I did alter it a little bit with the amount of sugar and switched out the oil for apple sauce. I also added cocoa powder to it. The bread was a big hit and I have been asked to make more!

Wonderful zucchini recipe -- the use of apples was wonderful! I used black walnuts -- several requests for the recipe. On the second baking, I doubled the apples (grated and successfully reduced the sugar and oil. Thanks!
