    I used 1 1/2c reg flour 1 3/4 whole wheat 1 1/2 Q oats 1c reg sugar and 1/2c honey , 1c oil 3 granny smith apples and 3 med zucchini in the food prossesor . increased the time to at least 60 min . I had extra batter leftover I made muffens to hmmm hmmm good forget-about-it!!

    I made the bread for my family and for church. I did alter it a little bit with the amount of sugar and switched out the oil for apple sauce. I also added cocoa powder to it. The bread was a big hit and I have been asked to make more!

    Wonderful zucchini recipe -- the use of apples was wonderful! I used black walnuts -- several requests for the recipe. On the second baking, I doubled the apples (grated and successfully reduced the sugar and oil. Thanks!

    A moist and flavorful bread. I made 2 large loaves. Both were stuck in the pans, which I thought I had greased/floured well enough, but will be more generous next time.

    Revisions: reduced white sugar to 1 1/2 c and dark brown sugar to 3/4 c. Took the suggestion of another reviewer and did the white flour sub for 1 1/2 c whole wheat, 1 c flour and 1/2 c rolled oats. Added fresh grated ginger and it shines with the apple and walnuts (that I toasted first, then rubbed off the skins. I did not peel the apples and simply did a rough chop. Reduced oil to 1/2 c and subbed with 4 oz. unsweetened applesauce. The bread is plenty sweet with these changes.

    I was given an enormous zucchini by a co-worker who has a farm. It was a foot and a half long, about six inches in diameter. It was ridiculous, I'd never seen anything like it! Anyway, I've never made my own zucchini bread but was glad to give this a try based on all the positive reviews. I added an extra half cup of zucchini (obviously, used only 3/4 cup of the oil, added an extra 1/2 teaspoon of nutmeg, added a shredded carrot (the nuts in this recipe are a must, by the way. I got two loaves and about a dozen muffins out of this recipe! It's super moist, not too sweet. Next time I'll probably throw in a little grated ginger for extra flavor.

    I wanted to make a healthy breakfast bread or a great snack so I took this recipe, made a few alterations, and it was perfect! Here are the additions and subtractions I made-- they were honestly delicious and it was moist, flavorful and didn't taste "too healthy"

    I added three smashed very ripe bananas instead of the oil. Instead of 4c of flour, I did 1.5 c whole wheat flour, 1 c flour and 1/2 c oats. Finally, instead of the 2c sugar and 1c brown sugar, I put 1.5 cups of maple syrup and agave nectar blend (from Trader Joes next to maple syrup

    These alterations made the bread much more healthy and maintained the zuchini bread taste I've always known and loved!

    I took several others' suggestions -- I substituted 1/2 cup of the oil with unsweetened applesauce, 1 cup of the regular flour with whole wheat flour and I added about 3 tbsps. of ground flaxseed. I also didn't have an apple on hand so I grated a firm Bosc pear instead. Result? Unbelievably delicious!!!
    I've been trying to find a way to sneak healthy stuff (especially the ground flaxseed into food for my family. This totally worked. The kids and my husband loved it!

    Couldn't wait to try this after all the reviews. I took some of the suggested alterations and added a couple more. Substituted one cup of the white flour for whole wheat flour, exchanged half of the oil with applesauce, added a handful each of flax seed, wheat bran and wheat germ, added more zucchini and a shredded carrot, chopped the apple instead of shred, and a bit more nutmeg and a dash of cloves. Took a little longer to bake that the recipe suggests, but came out great and moist. Not too sweet but definitely a treat.
    I'm going to try toasting up a piece tomorrow for my dad, who never eats veggies and has a love of processed baked goods( aka garbage. This is going to be a great recipe to get some nutrition into him, and it's so good he won't even know to complain!

    I have made this several times- a hit everytime. I substitute 8 oz applesauce for 1/2 cup of oil and add additional 1/2 cup of zucchini.

    this recipe was great after i made a few alterations, instead of grating the apple i chopped it in large pieces and i used walnut halves i also substituted half the oil for applesauce.
