Absolutely wonderful. I used this as our main entree, instead of traditional pasta, and got three servings. The play of the onions opposite the apricots is really delightful. The lemon is the crowning touch. I couldn't find my bag of couscous, so I used a box of Near East Toasted Pine Nut Couscous instead, and it was just fine.

Absolutely delicious, and easy Tyler. Can't say the same for trying to print out the recipe though. I give that only a 2 star. The 3x5 format is missing 2 of the ingredients, and a portion of the directions. This is certainly getting soooo annoying. I have to write in a portion of the ingredients after I've retrieved them.What a bother. Almost not worth it. Does anyone else ever have trouble printing the 3x5 format? Hey, you folks at Food Network, does anyone ever edit these cards before they're posted? Please, don't embarrass the chefs with poor quality control. They try hard to present wonderful meals for us all. Do make it easier for us to print these out....

The best couscous dish we've ever had!! Followed the recipe to the T with whole wheat flour and cilantro and truly was delicious. It was so good, both my boyfriend and I ate the whole thing in under 5 minutes. Just be prepared that when you serve this that it will go very quickly. I recommend using slivered almonds too.

This couscous dish was wonderful, the flavors are great and work well together. I switched out for whole wheat couscous. The recipe is simply amazing.

This is a keeper. Have made this for family and friends and all love it -- even my husband who is picky about grains.......Have to leave out the nuts due to allergies and it still tastes great. Thanks Tyler for a nice refreshing side dish.

I didn't add the cilantro, as it's a flavor that my husband doesn't like. The only change I would make next time is to use slivered almonds instead of "coarsely chopped". I think the texture would be better.
Great flavors! A definite repeat!!

I made this last night and served it with lamb -- it is amazing! So quick to make, just a little sweet from the apricot, fresh with the herbs, and studded with toasty little almonds. My teenaged nephew loved it, and I think it would make a lot of simple meat dishes taste really special. It looks like you spent a lot of time, but it's really fast and easy.

This is a fantastic recipe! I made it last night and my husband could not get enough of it. The flavors are beautiful and bright, very fresh. The combination of the apricots and almonds work wonderfully. What a great side dish! I will definitely be making this again. Thanks, Tyler!

I made this tonight with a peach chicken recipe and they were amazing together! I didn't have mint or lemon, but it seemed to fare just fine without these two ingredients. I spooned some maple syrup over this right before I served it and it really brought out the flavors of the apricots. This was an easy recipe that everyone in my family complimented. I will definitely make this again!
