Bobby's Taco Party

Bobby Flay's "Tacos and Tequila" party brought out the stars − and some killer tacos.

If Bobby Flay has his way, your family's taco night will never be the same. Bobby has been showing us for years that tacos don’t have to be ordinary, but he drove the point home at his "Tacos and Tequila" party at Food Network's New York City Wine and Food Festival last fall. He asked 25 chefs to make their favorite taco, and he got 25 very different results. We tasted our way around the room and then asked four Food Network stars to hand over their recipes.

To Bobby, a great taco is all about texture: "It’s got to have crunch!" he says. His tacos for the party, tender short ribs in crisp tortilla shells, had contrast in every bite.

Melissa d'Arabian stewed pork shoulder and bacon in red wine for her tacos. "I love how the bacony flavor comes out as it braises," the Ten Dollar Dinners host says.

Bobby Flay calls Alex Guarnaschelli the Acid Queen. It's not an insult—he means that the host of Alex's Day Off has a way with vinegar: The secret to her tacos is a tart slaw.

Marcela Valladolid didn't pack lightly for the festival: The Mexican Made Easy host brought hundreds of dried chiles and tortillas from Southern California to make these authentic tacos. "You don't mess with great Mexican food," she says.
