Winning Recipe: Pineapple Polenta Squares with Shrimp

Looks like many of you are ready for warm weather—or an island vacation. Our December 2009 contest drew hundreds of tropical pineapple dishes, including tacos and burgers. But the champion was this grilled pineapple polenta with shrimp from Karen Dawson of Charlotte, N.C. Karen gave the classic Hawaiian ham-and-pineapple combo a twist, wrapping pineapple-marinated shrimp in prosciutto and serving it on pineapple polenta with pineapple-brown butter sauce. "It's one of the best fruits to use in savory recipes," she says.
