    I have been seeking a recipe for a really fluffy pancake, and alas, have finally found what I was looking for. I am a bit of a pancake connoisseur and I really enjoyed this recipe. I had an old recipe that I tried to jazz up by whipping egg whites and even adding a bit of 7-up to "fluff" up the pancakes, but I think the fluffiness secret is in shaking the buttermilk. I actually didn't have any buttermilk on hand so I just used a tablespoon and a half of lemon juice in milk and let it sit on the counter for 15 minutes before shaking vigorously. The pancakes turned out awesome. The extra egg in the recipe (most recipes call for 1 gives the the pancake a bit more of an eggy taste which I liked. I added a 1/2 teaspoon of cinnamon and a teaspoon of vanilla to this recipe to give it some extra love.

    DELICIOUS!!!! I decided to give this recipe a try and I was completely satisfied!!!! The pancakes are so soft and fluffy!!! My husband and I can't stop eating them. This is our official go to recipe for pancakes. I first mix together all my dry ingredients in one bowl then mix the wet in another bowl. I also add in 1 teaspoon and a half of vanilla extract to the wet mix. After I pour the wet mix into the dry and whisk together. I leave the batter lumpy. I let the mixture sit for about 10 minutes until I see the bubbles start to rise then I make them and enjoy. They come out perfect everytime. We even add in chocolate chips. Thanks Aida!!

    Way, way, way too much butter! They were greasy, flat and not fluffy at all. My son did like them however; me not so much.

    I made a double batch only using 1/2 c butter, 1/4 c melted vegetable shortening and three eggs. Also, sifted dry ingredients first before adding wet. They were very good although I would like them fluffier! I will try whipping the egg whites first and use less buttermilk. At any rate, there was no batter left! Served with boysenberry syrup! Just needed a few fresh peaches.
    Does anyone use applesauce in place of the butter? Will post results next time...

    My family and I love these pancakes. They are fluffy without an overwhelming buttermilk flavor. I noticed a lot of people are stating that the batter is inconsistent and I think the problem is with the way the recipe is written. I added all the dry ingredients to my bowl first: flour, sugar, salt, baking soda, and baking powder and mixed with a fork a few times. I then mixed all the wet ingredients together in a seperate bowl: buttermilk, eggs, and melted butter. I then combined both and mix only a few times. Perfect and consistent pancakes every time!

    OUTSTANDING!!! I have made these several times and the kids gobble them up faster than I can make them : Fluffy each and every time. Not to mention extremely easy to make.

    Very inconsistent. Some were fluffy and others were flat and all of them fell apart when flipped. My daughter (who LOVES pancakes wouldn't even eat them. The flavor was bland and it was a waste of time and effort. I should've stuck to my tried and true recipe, Alton Brown's "Instant" Pancake Mix, which is always delicious. Don't waste your time with this recipe.

    AMAZING! I have tried soooo many recipes for pancakes and they have all gone into the trash. These were so great! I followed the recipe to a "T" and they were super fluffy, if you make them too big they are a little difficult to flip over. Crispy on the outside and light and fluffy on the inside! Thanks Aida.

    Just made these this morning; VERY yummy. My wife and 4-year old loved them. Big tip to those mentioning a lack of "fluff": don't overmix and give the batter a couple of minutes to let the baking powder do its magic before putting on a hot griddle.

    I've been searching high and low for a great blueberry pancake recipe and this is it!! In fact, they are so good my sister chef is on her way here now to enjoy my cooking for a change. :
