The eggs turned out very runny. If they had been scrambled, this meal might have been ok. I did use store-bought tomatillo salsa, which was fine. I would not recommend this recipe.

I made the salsa and have tried it out in several applications. The tomatillos add a distinctive sharp note. When making the huevos rancheros I found it better to add red hot sauce to round out the flavor. The tomatillo salsa is excellent by itself with chips.

I just made this recipe today however, I did substitute "store bought tomatillo salsa" vs. making it from scratch because the tomatillos didn't look very fresh at my local market. It's the first time I've fried tortillas and it was awesome!

I've passed these sweet, green guys in the produce dept. all this time and never knew that I could have been making an unbelievably, insanely delicious salsa. I don't know what "real" huevos ranceros is (I'm from Nebraska - can I get a pardon? but this is g-o-o-d. And this, coming from a girl who doesn't typically like corn tortillas and a husband who doesn't eat eggs. We both enjoyed immensely!
Note: my drop-the-egg-in-water attempt was a failure so I went fried (me and 2 yr old and scrambed (husband. Avocado and hot sauce rounded this already great dish.
Salsa note: We are currently dreaming up different foods we can drown out with our new found love, the green salsa! Fried potatoes and eggs wrapped in flour tortilla....

This is a good recipe but when you show a video of a family with a few children looking for ideas for eggs for breakfast, I think you would consider recipes that children would enjoy. I didn't really see that in this show today.

I am from California, and I have had Huevos Rancheros on many Sundays, which is tradition. This is a great looking recipe, but is not Huevos Rancheros. Even in Mexico, it does not resemble this recipe. Don't get me wrong, I am not saying not to try this recipe, because it sounds great! The interpretation is creative. But I added more sauce, and sauteed tomatoes with onions, beans (black or refried, mexican potatoes, and more cheese. Now you have something like Huevos Rancheros.
