    Prepared this but added one jalapeno and one red pepper to the onions. Make sure you temper the eggs. It was delicious.

    I usually don't review recipes but I just had to because this is one of my favorites. I literally have to limit how often I make this Baked Corn Pudding because it's so good. Everyone goes crazy over it. Some reviews have said it to be mushy or taste like scrambled eggs. It shouldn't if you temper the eggs before adding them. I also use an entire onion instead of the recommended half.

    I made this for Thanksgiving because last week my hubby had nine teeth pulled, all molars. Usually I make regular plain buttered corn. I made this because I thought it would go down easier for him. It did, and he actually liked it. I was not crazy about this. It tasted like scrambled eggs with corn. It was too mushy and unappetizing. Would not make this again.

    We had a chili cook off at my job and I made this dish as a side, it was a hit. Everyone loved it and wants me to make it again. This dish was so good it made it on my Thanksgiving menu.

    I made this recipe last night in anticipation of using it for Thanksgiving dinner knowing my husband probably wouldn't like it. What a great surprise!!! It was delicious and he loved it! He couldn't stop picking at it after dinner and took a piece to work for lunch today. I was completely amazed that it was so tasty and flavorful - I had thought it would be rather bland because I did not use the jalapeno since I don't like Mexican spices. I used a scant 1/2 tsp. of salt and a little less pepper, but will reduce the pepper to 1/4 tsp. for Thanksgiving because it was spicy from the pepper. It also was rather quick and easy to make. This is definitely a keeper and will be on my Thanksgiving buffet!

    omg, this was wonderful, I too am from NC, and took this to a pig pickin today and it was a hit! I added a few green onions as well. Wonderful!

    pretty good!! i had a bunch of fresh corn a neighbor brought me so i sauteed that then set aside then sauteed the onions and jalapeno! i also added some bacon too it... sort of a take on creamed corn! it was also a great way to use some old bread (i just put the end pieces no one ever eats from a loaf of bread into a food processor then sprinkled on top with the parm! my friends loved it for our southern veggie dinner party!!
