Preheat the oven to 325 degrees F. Butter a 9 x 5 x 3 inch loaf pan.

Cream the sugar and butter in a large mixing bowl until light and fluffy. Add the eggs one at a time, beating well after each addition.

In a small bowl, mash the bananas with a fork. Mix in the milk and cinnamon. In another bowl, mix together the flour, baking powder, baking soda and salt.

Add the banana mixture to the creamed mixture and stir until combined. Add dry ingredients, mixing just until flour disappears.

Pour batter into prepared pan and bake 1 hour to 1 hour 10 minutes, until a toothpick inserted in the center comes out clean. Set aside to cool on a rack for 15 minutes. Remove bread from pan, invert onto rack and cool completely before slicing.

Spread slices with honey or serve with ice cream.

My go-to recipe for simple and delicious banana bread! I always add an extra banana, some chopped nuts, and a few cranberries or raisins if I have them on hand. Made exactly as written with the addition of walnuts, and it was too sweet (should have known better when a recipe calls for a whole cup in one loaf).  I always use very, very ripe bananas for bread so next time I will cut the sugar down to 2/3 cup instead of a whole cup.  Otherwise a great and easy recipe (esp. if you make it all in one bowl to avoid extra dishes).  I've made a lot of different banana bread recipes and I like this one the best despite it's super sweetness.   item not reviewed by moderator and published

I hate that you have to rate this before posting. What if you have a question like I do? Has anyone tried to exchange the butter with coconut oil? A few tips for ALL baked goods that will have a huge impact on YOUR rating : 1) ALWAYS fluff up the flour BEFORE measuring. This makes a difference in actual amt. of flour used.(probably why most European measurements use weight rather than cup measurements). It is more CONSISTANT 2) invest just a few dollars in an oven thermometer. Ovens can be off by alot over time.leaving food either dry or under done.3) In this type of recipe, the sweetness depends alot on just how over ripe the bananas actually are. The blacker bananas are far sweeter than the speckled skinned bananas. So you can adjust your sugar a bit depending on color of banana &amp; personal tastes. For any banana bread recipe, I find whipping the heck out of bananas &amp; eggs makes a far better cosistancy. BUT once the dry ingredients are added I just stir to combine, making SURE there is no dry flour mixture in the bottom of the bowl.BUT then do NOT over mix ! This recipe needs 1/2 to 1t. I've been looking for a banana bread recipe that wasn't overly sweet or greasy. I finally found perfection! Typically I would not review a recipe that I did not follow to a T, but my substitution would not change the outcome of a less sweet or greasy outcome. I found I did not have skim milk but did have some coffee left from breakfast which I used in its place. I have another recipe for a coffee cake that uses coffee instead of milk, which is what gave me the idea. The banana bread did not take on any coffee flavor but it added the moistness needed for mixing. It is delicious! So what changes did I make (like everybody ;-)? I used 4 bananas, added 1 tea of nutmeg and 1 cup chopped pecans. Also, I had about a tablespoon of creme fraiche left and used that instead of the milk. I divided the batter and used two loaf pans-they came out perfect in about 1 hr. Holy Smokes! This is FANTASTIC! I was so excited to have all the ingredients that I blew it a couple of ways and it still came out fabulous! I didn't have unsalted butter and used the regular stuff. I mixed the cinnamon with the dry ingredients...oh well! This bread is perfection! Wonderful recipe with a few alterations. I added an extra banana (so, 4 total) like many others did. I also threw in a teaspoon or two of vanilla. In addition, I used cane sugar, which did not cream so well with the butter, but the end product is still fabulous! I enjoyed how easily this came together. As I prefer a banana bread that's less sweet, I halved the sugar — evaporated cane sugar, in my case — and still found it plenty sweet for my taste. 804 reviews can't be wrong, and happy to report, they weren't. This is really the best banana bread I've had. It doesn't have that strange aftertaste you can sometimes get from banana bread. I don't like nuts and it's not called for here. The cinnamon adds a lot and I added a touch of vanilla. This is moist, not too sweet but not bland or too subdued. Really love this banana bread. Even though I forgot to read the review- it would have seconded my instinct to add some vanilla- I made it per recipe plus milk chocolate chips. The bread was very light, not the density of my pumpkin breads for instance. I'll try it again with 4 bananas and the vanilla because I would prefer a stronger banana taste. Great recipe. One of the best banana breads I've made. I did add 1 tsp vanilla and 5 bananas based on other peoples review. I rarely have time to make banana bread when my bananas are brown. So I freeze them. I added 1/2 tsp vanilla extract and 1/2 tsp maple flavor, and since I didn't have any cinnamon I used 1 1/2 tsp of pumpkin spice. I am not a baker, but I don't like wasting food, and had exactly three brown bananas. What appealed to me about this recipe was that the reviews indicated a lot of room for forgiveness, rather than typical baking precision. Along with others, I added about a splash of vanilla and a dash of nutmeg. I also added chopped pecans and about a dollop of Greek yogurt. My only complaint is that four bananas would really be better. I used self rising flour instead of the all purpose plus leavening. I also added half a tsp of vanilla, and about 1/4 tsp of nutmeg. Turned them into muffins and cut the baking time in half and gave me 15 full sized muffins. Great recipe and really easy. The prep time is also a bit off. Wonderful recipe! I made some changes however. I used 1 cup flour, and 1 cup oatmeal. I added 1 teaspoon ground ginger to the dry ingredients. I used 1 cup brown sugar instead of white sugar.Added 1 teaspoon vanilla to banana mixture. And I folded in 2/3 cup pecans (roasted) at the end. I've been using the same banana bread recipe for years and wanted to change it up a bit. THIS RECIPE IS DELICIOUS!!!! I seriously had no idea banana bread could taste this moist. I agree with you about raters saying how wonderful the recipe is, give it 5 stars, but then proceed with telling you how to make it better. BTW I have also made this with whole wheat flour in varied amounts. IMO wheat is healthier, but has a " eat this becaue it is good for you taste" So I limit whole wheat flour to no more than a 1/2 C. substitution.Instead I like all unbleached flour, no whole wheat flour,; then add chopped walnuts. Sorry for the review frustration. I would just like to get a review on the original recipe for once. I modify recipes either from experience or the lack of ingredients but I don't review my own recipe until I make the original. Moreover, I never really figured out what three bananas should weigh. Bananas vary in size. I tend to go with more banana. This recipe requires less butter and very little mixing of the flour. The resulting texture is perfect and delicious.
