    My Fiance does not like nuts and our close friend is allergic to them - so this recipie was necessary. Yet - I needed to cover the slices in Honey so they were not dry along with bland. Not sure what is missing?? but wont make this recipie again.

    This recipe was ok, I like banana bread to be a bit sweeter and fluffier. This called for 2 cups of flour for one loaf which made the bread a bit heavy and thick.

    This recipe is a great one! I used it as a start and made a few changes. I used 5-6 bananas instead of 3, added about 1/2-3/4 more sugar, a tsp of real vanilla from mexico (it is stronger than most vanillas so if you are using the fake stuff--which i do not suggest--use double the amount, about a tsp of nutmeg, and cooked it for about 1h 30m. The outside and top were finished before the middle, so I tented the top with aluminum foil to prevent it from burning at the 1 hour mark about... use your judgment.

    We had this for Thanksgiving and it fed 17 people when cut in slices and then halve those. There were no leftovers, which we were disappointed about, but it will be made again for Christmas lunch.

    It's a no-brainer. All of my family and friends wanted this recipe, even the ones that normally don't cook or bake. My picky-eater 4 1/2-year-old loves it!

    Here is a way to make the bread very special. Put all liquid ingredients in food processor and whirl until well processed. This includes bananas (use 4 large very ripe mixed with 1 teaspoon lemon jucie& substitute buttermilk for regular milk. I melt the butter as well.

    Mix all dry ingredients together and then just blend lightly with liquid mixture until moist.

    Use 1 1/2 cups pecan halves.

    This makes a wonderful loaf or muffins.
