It was okay. I liked it. Boyfriend did not. Then again he is not a fan of coleslaw type of salads. A little on the sweeter side. Definitely makes more servings than what the recipe suggests. I am planning to eat it for dinner for 1 week....is that safe?

Had this for dinner tonight with Ina's Salmon cakes and it was okay. I did sprinkle chopped walnuts over the salad which made it a little more favorable. Not one of my favorites but okay.

I really liked this carrot salad. I bought this type of salad once at a store but the ingredients included high fructose corn syrup so this one is a good choice for me. It's really good and easy to make. I will definitely make it again.

I had some fresh pineapple slices leftover from another recipe and wanted to use them in something easy to make. Reduced the carrots to 3 medium sized ones, peeled, grated by hand (equivalent of approx. 1-1/2 cups, and the sugar to 1 tbsp. because of the ripe and sweet flavor of the pineapple. The dressing ingredients were also reduced in accordance with the new quantities required....experimented with measuring and tasting tablespoon by tablespoon to arrive at the appropriate dressing mixture. Absolutely a favorite from now on, especially for me as I'm not usually much into vegetables. Even my husband loves it and he doesn't favor "sweet" salads much! A real saver!

For me, this recipe was not very special. It was alright but there was no wow factor that will make me make it again. In truth I found it kind of boring. What a shame, I adore Ina! ~ suziethefoodie

This is the first of Ina's recipe I will NOT make again. Sorry - it is rather pedestrian; no complexity or verve. I made this to go with a fabulous jerk chicken BBQ. Virtually untouched - even my sweet-loving kids wouldn't touch it...

I have made this before but loaned out the recipe to someone ... lost it ... long story. Anyhooo ... got on this website to search for it and Voila. Am so happy to find it as it is wonderful if you like a sweet flavored kind of carrot slaw. And I do. Think this is a good way to get your kids to eat carrots too, which is what I'm planning for tomorrow night and why I've searched this out! Frankly, I've never met a Barefoot Contessa recipe I didn't like!

Number of servings is much higher than stated.
Excellent flavor and easy to make.
I found it better to serve the next day. Gives dressing a chance to marinade with the carrots..
I made one adjustment to the recipe. I added dried cranberries. Gave the carrots, pineapple and golden raisins a contrasting color.
