- 2 -3 teaspoons Dijon mustard
- salt & pepper, to taste
- 1/4 cup red wine vinegar
- 3/4 cup extra virgin olive oil
In a bowl whisk together mustard, salt, pepper, and red wine vinegar. Add olive oil in a stream to vinegar mixture and whisk until mixture emulsifies. Taste and adjust seasoning with salt & pepper.
