Basic Vinaigrette

Ingredients
  • 2 -3 teaspoons Dijon mustard
  • salt & pepper, to taste
  • 1/4 cup red wine vinegar
  • 3/4 cup extra virgin olive oil
Directions
  • In a bowl whisk together mustard, salt, pepper, and red wine vinegar. Add olive oil in a stream to vinegar mixture and whisk until mixture emulsifies. Taste and adjust seasoning with salt & pepper.
