BBQ Chicken Quesadilla

Ingredients
  • 4 (12-inch) flour tortillas
  • 1/4 cup grated Cheddar, plus 1/4 cup
  • 1/4 cup grated queso blanco
  • 8 ounces cooked boneless, skinless chicken breast, small diced
  • 1 red onion, thinly sliced
  • 1/4 cup favorite barbecue sauce
  • Tropical Fruit Salsa, recipe follows
  • Cilantro sprigs, for garnish
  • Tropical Fruit Salsa:
  • 1/4 cup small diced mango
  • 1/4 cup small diced papaya
  • 1/4 cup small diced pineapple
  • 1 red jalapeno, minced
  • 1/2 lime, juiced
  • Pinch salt
Directions

Lay out 2 of the flour tortillas on a flat surface. Top with 1/4 cup of the Cheddar, and the queso blanco spreading evenly over the tortillas. Divide the chicken among the tortillas and sprinkle with the desired amount of red onion. Top with barbecue sauce and remaining 1/4 cup of Cheddar. Top with remaining tortillas and press to seal.

Heat a large saute pan over high heat. Add enough oil to coat the bottom of the pan and lower the heat to medium. Cook until golden brown on both sides, about 3 minutes per side. Repeat with the other quesadilla.

Let cool for 5 minutes. Slice into 8 or 10 pieces. Garnish with Tropical Fruit Salsa and cilantro sprigs.

Tropical Fruit Salsa:

Combine all ingredients and mix well. Let sit for 30 minutes before serving.

Yield: 3/4 cup

    This was really easy to make and everyone liked it. We use pre-cooked chicken so it was really just assembling and cooking. This will be a great addition to our weeknight dinner options.
    we had a breast and a half of extra bbq chicken (ina gardens - yum!)from earlier in the week and this was a great way to use it up! we have done chicken quesadillas before, but the bbq sauce changed it into something different. and the fruit salsa was so good! i used it on blackend mahi mahi also. simple idea and yummy indgredients. thanks!
    I will definitely make this again! I used Paula Deen's homemade bbq sauce and used saute'ed white onion instead of red, b/c I didnt have any on hand...Also didn't have any queso blanco or cheddar so I used fiesta mix shredded cheese blend. I'm sure the recipe is even more delicious if you follow it to a T.
    This was so easy and so yummy. I sauteed the chicken with garlic and some lime. I also added some of my favorite green chille salso to the sauce for some added spice. I loved this, and I will defenitely make it again.
    This was the first time I tried this recipe and it was a huge hit with my hubby! I didn't have all the ingredients, so I just made it with the tortillas, chicken, cheddar cheese, red onion, and bbq sauce (a good one to try is Hunt's Hickory & Brown Sugar BBQ). It was sooooo good! I can't wait to buy all the other ingredients to try the original recipe!

    These were so simple and so good!! Everyone loved them. I used Annies Naturals Organic BBQ sauce and it was perfect with this recipe.

    Grilled chicken breast and sauced at the end before chopping
     
    Sauteed onions before adding
     
    Grilled Quesadilla
     
    Left Papaya out of salsa

    I cannot begin to tell you how many people I have had to give this recipe to since serving it the first time. My boyfriend craved leftovers all week - I was at another party where filet minon appetizers were being served & brought this recipe for an appetizer & the filet minon plate was filled by the end of the night & these quesidillas were gone! This recipe is phenomenal!
    Very easy to make, and tastes good too. I served this to my housemates last Sunday using Honey Mustard BBQ Sauce, and everybody really liked it.
