Ingredients

  • 1 slab pork ribs
  • Salt
  • Favorite Spice Rub (recommended: Cooper's Spice Rub)

Directions

Prepare a smoker. Season ribs with salt and spice rub on both sides. Place ribs into smoker. Smoke for 1 1/2 hours, flipping them over once. No sauce is needed, as the ribs are cooked the "cowboy way," over direct heat with salt and spices only.

    I've been to Coopers in Llano, TX and know for a fact that the secret is in the rub. Remember also, these ribs are cooked over direct heat, not just smoked.
    Coopers BBQ was the highlight of our Texas trip.
