We were searching for something to cook at the last minute and found this recipe. We discovered it to be incredibly easy and so tasty. It will be one of my staple side dishes!!

We all liked this recipe. It was very easy to make. I did serve it over the spinach with the oil/vinegar mixed in it even though it seemed different. I put the zucchini on a little grill we use for fish.
3 medium zucchini were enough for 4 people. I used half of the amounts of the oil and balsamic vinegar.
