Ingredients
- 2 pounds red potatoes, halved
- 1 white onion, diced
- 5 stalks celery, diced
- 1 bunch green onions, diced
- 1 cup mayonnaise
- I cup diced green apples
- 1 bunch parsley, leaves chopped
- Salt and pepper
- 1/2 cup cider vinegar
- 1 teaspoon celery seed
- 1/2 teaspoon cayenne pepper
- 1 lemon
Directions
Boil potatoes until fork tender. Remove from water and cool. When cool, add the rest of the ingredients and mix together.

I excluded the cider vinegar and it tasted amazing! Will become a Sunday brunch staple! Also, holds up well the day after.

I second the review that gave it a higher rating. People who have a specific preference should learn how to read a recipe before trying it...besides, every recipe can be adapted to personal tastes. Anyway, apples have been a secret ingredient in my mom's potato salad for years, it adds an unexpected little bit of sweetness (which offsets the vinegar as well as subtle new texture to the dish.
