Ingredients
Filling:
- 8 cups blackberries
- 2 tablespoons all-purpose flour
- 2 tablespoons ground cinnamon
- 1 1/4 cups sugar
- 1/2 cup sour mash bourbon whiskey
Batter:
- 1 1/2 cups all-purpose flour
- 1 tablespoon baking powder
- Salt
- 1 1/2 stick butter
- 1/3 cup sugar
- 1 egg
- 1/2 cup heavy cream
- 1 teaspoon vanilla extract
Directions
Preheat oven 350 degrees F.
Combine the blackberries, flour, cinnamon, sugar and burbon in pot and heat over low heat. Allow the sugar to dissolve and the syrup to form. Over medium heat, bring the mixture to a boil. Then reduce the heat and allow it to cook until tender. Remove the mixture and set aside and keep warm. Mix all batter ingredients together in a large mixing bowl. Pour batter over berries and return to the center of the oven and bake for 1 hour or until brown on top.

The basic idea was great but did not like the cinnamon. It did not indicate what is the butter consistency; is it mixed as soft butter or melted butter. I did soft butter but think that was wrong because later I read "to pour batter over berries". Another thing, it took an hour of preparation but if you bake for one hour why cook berry mixture I will test again with changes

This has the best biscuit-y topping of any cobbler I have ever had. It's light and fluffy, yet still crisp.
The filling though, would have been better without the cinnamon and with a touch of lemon instead. The cinnamon just obscures the flavor of the blackberries and adds an unpleasant graininess.
