    Rather than using panchetta I used bacon. Still came out perfectly. This will be one of my favorite dishes to cook.

    Recipe is correct as written. A little harder to make then normal meatloaf, but worth the extra effort.

    I used ground round instead of chuck and bacon in place of the pancetta and this was wonderful. Loved the baked roma tomatoes you put on top...well worth the wait! Also, I used 2 loaf pans for this recipe because one was not large enough. This is a keeper!!

    I didn't make the sandwiches but I did make the meatloaf. It was moist and just wonderful. For seasoning I used Homemade Gourmet Meatload Mozerella Seasoning. It was SOOOOOOOO good.
