    Loved the beignets. I used 2% instead, and they still tasted yummy. They were so light and fluffy. I think letting the yeast work twice definitely helped in creating the fluffy structure.

    This recipe is the closest I have found to the beignets that are at the Cafe du Monde in the French Quarter. Light, fluffy, and tasty.

    So quick and so good!! My daughters have been asking for beignets ever since seeing the Princess and the Frog. Made these on Sunday morning and they were a big hit!! We drizzled honey over some of them instead of the powdered sugar. Made a huge batch, enough to share with our neighbors and take to Grandma! I used whole milk also with excellent results!

    For a complete newbie, these were easy. I had to let the dough sit for 90 min, so they weren't as good in the end.

    Very easy to make and just as good as the French Quarter. I did use whole milk because I did not have evap and I was pleased with the result
