They came out good and really cute, but the recipe was confusing. Did you use a mini muffin tin, or regular? Mine made 32, not 24. Did you mix the batter and coolwhip by hand? It was difficult, could you use a mixer? Did you leave the cakes in the tin until the very end? It seems like they would be very hard to get out of the tins. How much is 1 cup of egg whites? I used 6 eggs and that made 3/4 cup, which was about double of what I needed. 4 eggs would've been more than enough. Recipe was poorly written and very confusing.

I tried making the crust twice, both times extremely doughy, nothing like how the recipe was made on the show. I am just happy that I didn't waste the pudding boxes or all those egg whites for the meringue. That would of upset me even more.

I just finished trying to make these tea cakes twice and that was after the episode was on TV and watching it several times. The first time the cakes were doughy and not done so I made them again. I had batter left over but didn't use it after making the 24 tea cakes. Having baked a lot I felt the cakes had to come our of the pans or they would end up wet like my first batch. The second batch are doughy and wet and just not worth the rest of the ingredients.

Although I've made Paula Deen's Lemon Blossoms several times and they just get better every time I take them some where, these tea cakes are nothing I will ever try again.

What did the rest of you do about the tea cakes sweating in the pans?

I always bake from scratch but these teacakes looked adorable and with lemon cake and pudding I thought I would at least give them a try...I have never been so disappointed in a recipe, the lemon flavor was barely noticable, I love lemon and if you are looking for a lemon flavor and tartness this is definitely NOT worth trying!!

i made these with yellow cake mix and suger free vanilla pudding and fat free milk and sugar free cool whip and used imatation sugar for subsitue on the 2 tbls. of sugar and these little cakes turned out great. although i will say you need to bake them about 3 more min. than recipe calls for. great diet dessert

I love lemon so when I saw these cakes made on Sandra's show I wanted to try them. I usually make everything from scratch but I thought these would be quick and easy. They tasted terrible. They had a very chemical taste with the whipped topping and the instant pudding. The instant lemon pudding did not taste at all like lemon, I threw it away and made the cook type lemon pudding instead. They still tasted awful, the cake was dry with an awful texture. I had to just throw them away. I will definitely continue to cook from scratch and pass on the processed foods.

Love these tea cups! Made them not too long ago and since i only had one cup cake tray i used a pie pan it came out, just as great as the tea cup sizes. Would highly recommend this recipe :P

This isn't very close to Paula Dean's Blossoms. These are a lot different. I have made both and love both of them!
