Bibingka

Yield:
Makes about 15-20 squares.
Ingredients
  • 1/2 cup butter, softened
  • 1 lb sweet rice flour
  • 2 1/2 cup sugar
  • 1 tsp. baking powder
  • 3 cups milk (fresh or evaporated)
  • 5 eggs, beaten
  • 1 tsp. vanilla
  • 1 cup coconut flakes
Directions

Preheat oven to 350 F. Mix all ingredients in a greased 13 x 9 pan. Bake 1 hour at 350F, or until a toothpick inserted in the center comes out clean. When cool, cut into squares.

    I thought it was wonderfully YUMMY. I had to help my daughter make it for a school project. Students loved it.
    I've looked all over the 'net for recipes for Biningka and love this one the best. It's so easy to make and you have a wonderful treat in just over an hour. I also use a can of coconut milk for part of the milk and find it quite delicious.
    This is a pretty good and simple recipe with positive results from guests. I personally like to substitute the evap milk for a can of coconut milk and it works well.
