Ingredients

Dressing:

Salad:

  • 6 cups mixed fresh greens, soaked in salt water to remove grit, rinsed and dried in a salad spinner
  • 2 tablespoons chopped fresh cilantro leaves

Directions

To make the dressing, microwave lime in a small bowl to release essential oils, and set aside until cool enough to handle. Through the feed opening of a running blender add, 1 at a time, the papaya, papaya seeds, Dijon mustard, vinegar, salt, pepper, and juice from the microwaved lime. (Note: If you squeeze the lime with the sliced side against your palm, the seeds are likely to stay in the rind.) Then with the blender still running, add the olive oil in a slow thin stream. Please note that the edible papaya seeds lend a wonderful mustard-y taste to the dressing, but are coarse in texture. If you find the texture to be too coarse for you, strain the dressing before use.

Toss the greens and cilantro with enough of the dressing to coat, serving additional dressing on the side.

    I followed the recipe completely, and started with really flavorful, fresh papaya...and ended up with a dressing that tasted like mayonnaise. I then doubled the lime, papaya, salt, pepper, etc...and it still looked like Big Mac special sauce and still tasted like mayo. If I tried this again, I would have stopped at a quarter of the oil and given it a taste. I feel like those flavors _should_ work together, but not in the ratios of this recipe.

    This was really good...I only added about 1 tablespoon of the seeds so I didn't have the gritty problem. I couldn't imagine adding all those seeds...Try it !!

    We had company over for a luau this weekend and I tried this salad. I personally did not care for this recipe at all, however a lot of guests did - so that's why I am rating it 3 stars. I was disappointed that the flavor of the papaya was overshadowed by the mustard and next time I wouldn't add the papaya seeds, as that enhances the mustard flavor and even though I strained the dressing, it was still pretty gritty.
