Mix the pineapple juice, orange juice, and honey in a large container. Marinate the ribs in this mixture for 6 hours.
Sprinkle the ribs heavily with Everglades Seasoning. Smoke the ribs over indirect heat for 2 to 3 hours.
Cook’s Note
The ribs should not cook over direct heat because drippings could spark a fire and overcook the ribs. The coals should be to 1 side of the grill, the ribs to the other side. Billy Bowman prefers wet wood chips to give a smoked flavor.
