i mixed the cherries and nuts and chocolate in with the oil and eggs mixture. [well...I used 1/2 cup of applesauce instead of eggs. no eggs for me] and it all mixed together nicely.
it is true, the mixture is incredibly dry, but i added about a 1/2 tablespoon and everything was dandy after that.
other than that, it is a great recipe! try it.

I know that Italian biscotti are supposed to be dry and crisp but these "took the biscuit". There was too much flour for this recipe, making it too dry. As a result I couldn't mix in my cherries, choc and almonds properly. The log crumbled a bit when I tried to cut the biscotti. I will not be making them again

Great biscotti! I particlarly liked the fine texture. I've made this many times with different variations.

Questi biscotti sono fantastico! For people in America, don't seem to understand that, some italian cookies are dry. We have Foodnetwork and Giada De Laurentis, to get information about biscotti. Don't give this recipe thumbs down, try it, and put it in your repertoire. Ciao a tutti! biscotti, bis means twice, cotti means baked.

I also found this to be very dry. Crumbled when it was cut. Might try this combo of fruit and nuts in another basic bicotti recipe that is not so dry--needs butter.

I FOLLOWED THE INSTRUCTIONS BUT THERE WAS TO MUCH DRY INGREDIENTS OR NOT ENOUGH WET...IT TURNED OUT CRUMBLIE. IT TASTED OK BUT IT FELL APART.

This is a wonderful recipe! This was the first time I made biscotti and thought it might be difficult. It was very easy and turned out beautifully. I loved it so much that I thought what other combinations might be good, and made it again with dried cranberries, white choc. chips and almond extract. It was very delicious! My family and friends loved it too. Thanks Ellie, looking forward to more healthy, great tasting recipes.
