    We frequently make this meal when we invite guests over, and every one has wanted the recipe! The combination of flavors is fantastic, and what a great alternative to meat tacos!

    I made this for a potluck at my house and everyone loved it - even non-squash people. The squash was so easy to cook and tasted fantastic with the beans. We added some salsa to make it even more delicious. I did not make the pickled shallots. I will make this dish again.
