Ingredients

  • 1 can black beans
  • 1 scallion, sliced
  • 1 tomato, diced
  • 1 red onion, diced
  • 1 bunch fresh cilantro
  • 1 jalapeno pepper, seeded and minced
  • 1 lime
  • 3 tablespoons olive oil
  • Salt and pepper

Directions

Drain and rinse beans and place in a medium size bowl. Add scallion, tomato and onion. Using kitchen scissors snip cilantro into bowl. Add jalapeno. Squeeze in juice of lime. Drizzle in olive oil. Toss to coat. Season with salt and pepper

    This is easy to make and very tasty. I serve it with Rachael Ray's Halibut Fish Tacos and together, they are always a hit. Also works well as an accompaniment to quesadillas.

    I have made this plenty of times and just love it. It is simple, quick and tasty (even better the next day. I find that the lime does not give it as much punch as I'd like so I usually add some flavored vinegar and hot sauce.
