Blue-Cheese-Topped Steak

  • 4 shell steaks (about 12 ounces each)
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 6 ounces blue cheese
  • 2 tablespoons butter, at room temperature
  • 1 tablespoon chopped parsley leaves

Prepare outdoor grill with medium-hot coals, or heat gas grill to medium-hot (to broil, see below).

Season steaks with salt and pepper. Grill steaks, covered, about 6 minutes per side or until instant-read thermometer inserted in center registers 145 degrees F for medium-rare.

Meanwhile, blend together blue cheese and butter in small bowl until creamy. Equally divide blue cheese mixture over steaks. Keep steaks on grill another 30 seconds or until butter melts. Garnish with parsley.

To broil: Heat broiler. Grease broiler-pan rack. Broil steaks about 6 minutes on each side for medium-rare. Spread blue cheese mixture over each steak. Broil 30 seconds.

    Great recipe for steak. I love the pungency of the blue cheese. It is enough to make the taste interesting and creamy but not overpowering. The butter makes the cheese even richer.
    Simple to make and delicious! My entire family loved this recipe!
    Simple and delicious
    The butter made the blue cheese even creamier than I expected. It was delicious! I even left out the parsley, but added some garlic to the steaks. Didn't want to take the time to broil them, so I just put the bluebutter on top and covered them with foil while they rested.

    Two fo my favorite things which are perfect together
    I loved the tang of the blue cheese on top of the steak. A wonderful addition!
    Made the blue cheese spread over some brown sugar and bourbon marinated sirloins the combination of slightly sweet and salty was very good.
