Ingredients
- 1 teaspoon oil
- Flour
- 1 stick of butter
- 1 cup of sugar
- 2 eggs
- 1/2 cup milk
- 2 1/2 cups of blueberries
- 2 cups flour
- 2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla
Directions
Preheat oven to 375 degrees. Grease and flour 9x13-inch baking dish. Set aside. In bowl cream together butter and sugar. Beat in eggs. Add milk. In small bowl mash 1/2 cup blueberries then add to egg mixture. Add flour, baking powder, salt and vanilla. Mix well. Carefully stir in remaining blueberries. Pour into baking dish. Sprinkle with sugar. Bake for 30 minutes or until firm.

I see this is an older recipe but thank goodness it's still around. Made it this morning and it was delicious!

This is the easiest most foolproof coffeecake I've made and has become a family favorite. Even my neighbors beg for the recipe.

I haven't tried this but it sounds delicious! I know I shouldn't rate it without trying it first, but I must point out that one of the people who also rated this recipe complained that the amount of flour needed wasn't in the recipe. The flour was to be used to flour the pan. It wasn't actually going in the cake! You just use as much as needed, then dump the rest in the sink! Come on people! it says that right in the directions! Sheesh!
