  • Butter cooking spray
  • 4 (6 to 8-ounce) tilapia fillets
  • Salt and freshly cracked black pepper
  • 1 lime, finely grated zest and juice
  • 2 tablespoons butter
Directions

Preheat oven to 375 degrees F. Coat a large cast iron pan with a nonstick butter spray.

Rinse fish and pat dry; place on the cast iron pan. Season each fillet with salt, cracked pepper, lime zest and lime juice. Add fish to the pan. Place a pat of butter on each fillet and cook in the oven for 8 to 12 minutes.

I thawed fillets in the refrigerator today. After a long day at work, I asked my husband to find a recipe that he could make while I exercised. He does not know how to cook, told me he wouldn't cook before we got married 12 years ago, and has never followed a recipe start to finish other than boxed pancake mix. HE DID IT! He found a lime in the refrigerator and used our new Emeril pan that he researched on line to find out the heat maximum. The fish was perfectly done, delicious, moist, and tender. I love fish that is simple to prepare yet full of flavor. Those two don't credentials don't always go together. With this recipe they do! Perfect texture and taste. I never like to tweak recipes until I try the original. I had to here slightly. The only thing I changed was in part due to cooking 6 fillets, I added an additional lime and 2 more pads of butter, and soaked the fillets in the lime juice for a few minutes while prepping some other things on the menu for the evening. Literally just got done with this recipe! Loved it.. I needed something quick to do cause I procrastinated a paper and this fit the bill perfectly. It was delicious and if you follow the tips from other reviews about preheating a glass pan everything works out very well. Made this for my hubby today. I only had two filets and lemons. I used the juice of an entire lemon, California lemon peel, butter, black pepper, Himalayan Sea Salt and Adobo (without pepper. They cooked in exactly 12 minutes in my "slow" or "cool" oven at 400F, but I think the cast iron pan facilitated that process. Hubby liked it and it wasn't too lemony for him. This recipe is a good start but I followed the advice of other reviews and added more flavor. In a small bowl I mixed the lime zest and juice, kosher salt and ground pepper, added a little Mediterranean fish seasoning, 1 minced garlic clove and a small amount of olive oil to make a paste. I rubbed the fish with the paste. No need to add the calories of butter to keep the fish moist. I baked it according to the directions. I made this fish tonight's dinner. My husband devoured every piece. I did add a something extra. I had rubbed on some crushed spicy BBQ rub (bought it from safeway, in the spice aisle. That added a kick to it. Also I baked it for another 15 minutes since they seemed a little under-cooked. The lemony buttery taste was so good!!! Oh and please don't use the bottle-kind lemon juice. Use the juice squeezed from a fresh lemon, makes a big difference! The lemon zest also added a tangy flavor to it. This one is definitely a keeper. I tried this today and it came out really good. I customized some more to make it a bit spicy. I have made a paste of ginger and garlic,(also available in stores . I first applied the paste to the fish and let it soak in for five minutes. Then i applied sea salt , chilli seasoning. I used Olive oil in place of butter. I placed them in a silver foil and let it cook for 20 mins and then turned the fish over and added some more olive oil to not let the fish dry up. I have lowered the temp to 250 deg of my oven to let it cook gently. I garnished the fish with celnatro and added lime on top of it. My wife was surprised and impressed with the taste. I m surprised too with the taste. It came out much better than i thought. I believe the ginger garlic paste did add a lot of flavor to the fish. The taste just did not stay on the surface but soaked in really well.Olive oil worked really well to keep the fish moist and juicy. All in all , I had a very tasty lunch today. I made this last night with my own alterations to address the "bland" issues I had with this dish. • I started with frozen tilapia that I thawed, rinsed and then patted dry with paper towels. • Then I seasoned both sides of the fish generously with salt, pepper and garlic powder. • I zested and juiced two limes, not one and distributed it over the fish. • I added a half a tablespoon of butter to each fillet and put it in a 425 degree oven, not 375; you need high fast heat to give the fish some color which will also add to the flavor. • After about 5 minutes when all the butter has melted I turned the fish in the melted butter and cooked it a total of 15 minutes until it just flaked. I served the fish over jasmine rice with some fresh corn I cut off the cob and it was the most delicious seafood supper. I loved the simplicity of this dish but ..... taste wise it was just ok for me. I found it seriously lacking in flavor and ended up adding a mixture of lemon juice, EVOO & dijon mustard to try and pick up the flavor level. Tilapia is a major dish at our house. Because it is inexpensive and you can buy it individually frozen. However ,this recipe is at best disappointing. What a great tasting and extremely quick and easy recipe! I'm not a fish lover, so (like Bobby, I like my fish not to taste fishy, and Tilapia fills the bill. This is one fish recipe I will not hesitate to make more often. With this recipe, I think Tilapia has become my favorite fish. I used a pyrex pan lined with foil and sprayed with butter. Mine took about 10 minutes to cook, but my filets may not have been as thick as Bobby's. What a great recipe. I did preheat my cast iron pan in the oven. Done in 8 minutes. Very flaky and tasty!! Definitely a do-over!! Even my husband who's not a huge fish lover loved it. The cooking time is way off, which is disappointing for a basic recipe. It took around 15 mins for the fish to be completely cooked through and my oven thermometer confirmed that the temp was 375. Maybe they let their fish come up to room temp before cooking. Besides the cooking time being off, this is a good starting off point for someone who wants to experiment with a great fish that goes well with several different flavors. I would NOT recommend cooking it in a cold cast iron pan though. By the time the pan gets to 375 the top of the fish will be cooked through. I am not a big "fish" fan; however, we had some tilapia so I decided to search the site for a baked tilapia recipe. This one was simple, yet looked like it would be very flavorful with the lime juice. I went as little off course and mixed the lime juice, salt and cracked black peppercorn with a little bit of canola oil to make a marinade which I let the fish soak in for roughly two hours.
