Ingredients
Crust:
- 8 large graham crackers (3 1/2 ounces)
- 2 tablespoons unsalted butter, melted
Filling:
- 8 ounces Neufchatel cream cheese, softened
- 1 1/2 cups part-skim ricotta cheese
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1 egg
- Cocoa powder, for dusting
- 2 cups sliced strawberries, sprinkled with 1 teaspoon sugar
Directions
Preheat the oven to 350 degrees F.
For the crust: Place the graham crackers in a food processor and pulse until fine crumbs are formed. Add the butter and pulse again to combine. Transfer to the bottom of an 8-inch springform cake pan and press against the bottom of the pan. Bake for 8 to 10 minutes. Let cool.
For the filling: Beat together the cream cheese and ricotta with an electric mixer. Add the sugar, vanilla and egg and beat until well blended. Pour the mixture into the prepared crust. Place on a baking sheet and bake until the center is set and the edges are golden, 25 to 30 minutes. Let cool to room temperature, and then refrigerate overnight.
When ready to serve, slice and top with a dusting of cocoa powder and the sliced strawberries.

As a lifetime New Yorker--Brooklyn born and bred AND an Italian-American--I approve on all counts; Bobby did it right and checked all the boxes for me with this one! It is easy, light, fast, delicious, and yet doesn't lose the authenticity of the more labor-intensive versions out there. To make a chocolate cheesecake version, I sometimes add some cocoa powder to the ricotta mix itself then sprinkle regular confectioner's sugar on top as a contrast. Fuggedaboutit!

I made this cheesecake for my husband's birthday and he loved it! I couldn't find low fat cream cheese at the local market so I just used regular Philadelphia cream cheese. I also used a pre-made graham cracker crust. I actually ran out of cane sugar as I was making the cheesecake, so I used a little less than the recipe called for, but it was perfect. My husband doesn't like sweets very much but there are a few things that he will eat, and this cheesecake was one of them.
Oh, and I'd like to add that this was such an easy recipe! With so few ingredients! There's no way to mess it up.
