I love this cheese cake... Made it twice already! I made it for my friends (who are from NY and they loved it. I am hooked on Not My Momma's Meals. Fabulous!

As a lifetime New Yorker--Brooklyn born and bred AND an Italian-American--I approve on all counts; Bobby did it right and checked all the boxes for me with this one! It is easy, light, fast, delicious, and yet doesn't lose the authenticity of the more labor-intensive versions out there. To make a chocolate cheesecake version, I sometimes add some cocoa powder to the ricotta mix itself then sprinkle regular confectioner's sugar on top as a contrast. Fuggedaboutit!

I made this cheesecake for my husband's birthday and he loved it! I couldn't find low fat cream cheese at the local market so I just used regular Philadelphia cream cheese. I also used a pre-made graham cracker crust. I actually ran out of cane sugar as I was making the cheesecake, so I used a little less than the recipe called for, but it was perfect. My husband doesn't like sweets very much but there are a few things that he will eat, and this cheesecake was one of them.
Oh, and I'd like to add that this was such an easy recipe! With so few ingredients! There's no way to mess it up.
