Lovely Pie. But with cinnamon as the only seasoning, the filling is a bit boring. But I liked how I was able to substitute other apples for the Northern Spies-- like Alton Brown says, Granny Smiths for tartness and Fuji's for sweetness. The dough was fantastic, very flaky. The first time I made this, everybody ate up my crust. Though the second time I made the pie, the crust came out a little salty. The 3/4 tsp is definitely generous.

Made as suggested except I couldn't find Northern Spy apples so I substituted 1/2 Golden Delicious and 1/2 Granny Smith as that is what I had on hand. Finished product was oh so yummy and disappeared more quickly than usual :

My dad and i spruced up this recipe a bit, and my step-mom who does not like pie just ate this and loves it. She said that it was not gooey, and that's how she likes it.
This is what we did:
used Granny Smith apples, soaked them for about 20 minutes in the sugar, cinnamon, touch of nutmeg, some light brown sugar, lemon juice and vanilla. i had an overload with the vanilla though, but it turned out okay; it was not too much!!
layered the apples down, added some juice that was made when they were soaking, sprinkled some flour, more apples, flour and before putting the top crust on, some pieces of butter.
to me, this could have been more gooey because i like gooey pie filling. but if you don't like gooey, this is the way to go!

I'm new at baking, it turned out good, my wife had to help me some with the pastry. It's very tasty, and easy to make. I'll do it again.

First time making an apple pie, and I was stunned by how easy and good this recipe is. My only difficulty was moving the crust from the rolling surface to the pie shell -- both crusts broke up some along the way, although the final result looked fine after some doctoring. I also added a dash of nutmeg to the apple mixture, and it added another flavor layer. A great intro to apple pie!

This was my first time making a pie and it turned out perfect, I made it for our christmas dinner and everyone loved it. Ever since then I'v been craving for it. It's so delicious! My family loves it. The filling was perfect although I added granny apples. And for the crust I added carnation milk and sugar on the top and it was perfect...

I had 4 apples and a pear about to go bad so I used them all to make this pie. It was really easy and the crust was delicious. I've never put a crust into the oven without egg wash and I wished I had thought about it before because it wasn't as pretty when it was finished baking so I'll add to the directions and do it next time.

This was not only my first time making a pie but also making a crust. The crust was very easy to make and turned out perfect. The rest of the pie was delicious as well. I also used different apples, I used a mix of Gala's and Mc'Intosh. The only slight problem I had was that there was liquid when the pie came out (I'm assuming from the apples and sugar mixing and I had to drain a bit of it for the fear of the crust getting soggy. Besides that a wonderful and delicious pie!

Not having a lot of luck with pie crust in the past this one came out light and flakey. Very easy recipe.
