My mom says it's the best apple pie she's ever had. I've never heard of Northern Spy apples, though, and I use Pink Ladies instead. A little extra powder ingredients into the apple mixture doesn't hurt, and neither does rice vinegar. No difficulties in preparation, besides needing space and time. Perhaps the dough breaks apart too easily when you try to move it to the tin, but it patches up fine with extra dough once it's in.

I've used this recipie a number of times, each to rave reviews. I've had numerous requests for it. One of the best parts is eating the unuesd crust wrapped around the excess pieces of cinnamon- and sugar-coated apple. As good as that is, it doesn't compare to the finished product.
