Banana Pudding

Ingredients
  • 1 1/2 cups 2-percent Greek yogurt
  • 1 to 2 tablespoons clover honey or pure cane sugar
  • 1 teaspoon pure vanilla extract
  • 1 vanilla bean, split and seeds scraped
  • 1/4 cup cold heavy cream
  • 2 large ripe bananas, thinly sliced
  • 3 cups almond granola
  • Ground cinnamon, for sprinkling
Directions
  • Whisk together the yogurt, honey, vanilla extract and vanilla seeds in a bowl until combined. Beat the heavy cream in another bowl just until fluffy, and fold into the yogurt mixture.

  • Layer 6 individual trifle cups with the yogurt cream, sliced bananas and granola, and top with a sprinkle of cinnamon. Serve immediately.
