    Made this last night for our supperclub, just had to try something new - and so glad I did!

    The night before we marinated the chicken (in Stubs and some abobe sauce. Smoked the tomatoes the night before too - made the relish and the buttermilk dressing in the morning so the flavors combined better. I did add a bit more sour cream to the dressing and we didn't care for the dressings taste, but after we made the quesadillas and served them WOW put together all of the flavors really work. This was the hit of the night!

    I made these for a party, and ended up short on time, so I filled them with pulled-pork from the deli, and used a fire-roasted salsa on the side. I thought they were ok, but nothing special. The buttermilk dressing was really watery, so i put in A LOT more sour cream than called for, but I didn't think the dressing added much flavor. These weren't the bit hit I was expecting, and won't bother making them again.

    I love time consuming recipes, so this was great for me. If your short on time, you could make the salsa and the buttermilk dressing in advance! You could also use a rotisserie chicken to really cut down on time. This was so fantastic!! Bobby is becoming one of my favorite chefs!

    Quesadillias seem like a fairly simple thing to make, but this recipe has many steps and many elements. Let me just say that it is worth the effort!!! These quesadillias are to die for. Don't skip the buttermilk dressing; it's the best part!
