Ingredients
  • 12 ounces hot bulk sausage
  • 12 ounces mild bulk sausage
  • 4 tablespoons flour
  • 1/2 gallon milk
  • Salt
  • Pepper
  • Biscuits, store bought or homemade
Directions

In a large pot, add sausage and cook until browned and cooked through. Drain grease and add flour to sausage. Cook over medium-high heat until the sausage is well-coated with the flour. Add milk and stir until desired thickness and add salt and pepper, to taste. Serve with biscuits.

I think the ratio is off. You need a lot more flour to make it thick enough. We added about 4 tbsps of roux. I also suggest adding some kind of herbs. We used rosemary. item not reviewed by moderator and published
Made it this morning for brunch and it was very delicious. Due to all the comments I read, I did not use the measurements listed in the recipe. This recipe is good but VERY off when it comes to the milk. If you want to use a half gallon of milk you'll need to use much more flour. I used the called for 4 tbls of flour and only used not even half of the milk called for in this recipe. So if you use a half gallon of milk use extra flour and it will make a lot of this gravy. If you are using the 4 tbsl of flour and only half of the milk it will make much less gravy. I never made biscuits and grvy before, but had a lot of biscuts left from a party where I served Strawberry shortcake for dessert, so I tried this recipe, but with a little variation. I skipped the spicy sausage, instead used 12 oz package of Jones all natural bulk pork sausage and 3 Tbs of flour. Since the sausage had very little fat, I added a little bit of bacon fat to give it some flavor, salt and white pepper to taste. Then added milk (without measuring) until it was the right consitency. The store-bought buttermilk biscuits commonly used for strawberry shortcake were warmed in the toaster oven. The pork gravy was poured on top, and the whole dish topped off with a fried egg, over easy. This may be obvious to some, but ive never made biscuits and gravy before or seen it made. It should be way more descriptive that 1/2 gallon of milk needs to be added slowly, not that the actually recipe calls for an entire half gallon of milk....I hope its tasty but its possible this will be sausage and milk soup. item not reviewed by moderator and published

In the south, or Texas, where I am from, we would never put sage or onions or jalapenos in our biscuit gravy. We would throw some flour in the skillet where the sausage was cooked along with some butter. Then whisk in milk to the desired consistency (thick). item not reviewed by moderator and published

You have to remember the simplicity of biscuits and gravy, and how it's traditionally made. This has great flavor with the italian sausage, especially adding the hot along with the mild. Great Recipe and very easy to make. I decided to cut the recipe in half using only one packet of hot Italian sausage, and used 3 Tbls of all purpose flour. After adding milk I also added a dash of Cheyenne pepper and 2 Tbls of Frozen Bacon grease from the night before, stiring it in. Anyone saying this was 'soupy' or had too much milk, obviously did not read the directions where it says 'Add milk and stir until desired thickness'. That does not mean dump the half gallon in all at once.
